A-la-carte

The produce used in this menu has, as far as is possible, been sourced from the Canary Islands with the notable exception of the Lobster, which comes live from Maine in the US. Many of the salad leaves, herbs and vegetables are grown on our own small farm in the hills of Granadilla.


Starters

Soup of carrot and cardamom, celery almond croquette

Tuna tartar, fresh dill, artichokes, caper berries, shaved parmesan, pastry crisp

Hot smoked atlantic fish, seasoned green pea purée, vegetable tempura

Pork fillet, sage grape salsa, roasted sweet potato and vegetable timbale

Beef rib cooked on the bone, potato and carrot mash, caramelised onion, salsa chimichurri – for two people 

Pan-fried dorada, yucca chips, salad leaves, seasonal vegetable

Spring lamb, tabbouleh, baba ghanoush, falafel

Ostrich fillet, avocado coulis, papas negras

Puddings

Caramelised Pineapple, Papaya sorbet, coconut foam, Crunchy banana

Avocado and lime cream on a pine nut brittle with a thyme scented white chocolate soup

Warm chocolate sponge, tamarind mouse, Japanese peppered cookie and a shot of Chinese chiew
