Peter Borg has a complicated role, he is manager and a waiter. When not involved in one of these roles, which is rare, he can be found in his hammock with one, two or even three dogs!

Andrew Day was lucky to have a professional wine taster as a grandfather, which meant that he was introduced to the tastes, smells and unusual descriptions that are characteristic of good wines from an early age. As well as enjoying wine he also has a liking for Scottish Whisky, especially those” peaty” ones from the West Coast. This is not to say that wine and whisky are the limits of his knowledge. Classic cocktails and good Italian coffee are also within his realm. If asked to recommend a cocktail he would suggest a Magic Bus for easy drinking and the Diana’s Bitters for those who like it strong and bitter.
